These Barbecue Chicken Pita Pockets are one of my favorites. This is an easy chicken recipe that’s quick to make, and it’s great because it uses leftover chicken or even canned chicken.

I love the whole wheat pita bread with this recipe, but you can use whatever pita bread you prefer.
This barbecue chicken pita pocket recipe makes 4 servings, so it’s perfect for a family meal.
And since it takes only 15 minutes to prepare, it’s a great weeknight meal that you can get on the table quickly!
You can also add additional ingredients to your sandwiches such as avocado, tomato, lettuce, and cheese. For example, if you enjoy avocado slices on your sandwich then just add them to the barbecue chicken sandwich right before serving it.

Beef and Bean Chili
1 tablespoon olive oil
1 large onion, chopped
1 medium green bell pepper, chopped
2 garlic cloves, minced
2 pounds ground beef chuck (85 to 90 percent lean)
1 can (14 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
3 tablespoons chili powder
1/4 cup masa harina (corn flour) or all-purpose flour
2 cans (15 1/2 ounces each) red kidney beans, rinsed and drained
Shredded cheddar cheese, chopped onion, and sour cream, optional
Heat oil in a large pot over medium-high heat. Add onion and bell pepper; cook, stirring often, until softened, 4 to 6 minutes.
Add garlic and cook until fragrant, 30 seconds more. Stir in beef and cook, breaking up meat with a wooden spoon, until no longer pink, 5 to 7 minutes. Sprinkle flour over the top and cook, stirring occasionally, 2 minutes.
Stir in chili powder, cumin, coriander, and oregano; add tomatoes with their juice and bring to a boil. Reduce heat to medium-low, cover, and simmer for 10 minutes.

Black Bean Soup
In a large saucepan or soup pot, heat the olive oil over medium-high heat. Add the onion and sauté for 3 minutes. Add the garlic, cumin, and chili powder and cook for another minute.
Add the water, beans, and broth to the pot. Bring to a boil, reduce heat and simmer for 10 minutes.
Remove half of the soup from the pan and puree in a blender or food processor. Return it to the pan along with the lime juice, cilantro, and salt. Serve hot with crumbled tortilla chips (or cheese) on top

For the Filling:
1 1/2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 jalapeño, seeded and minced
Kosher salt and freshly ground black pepper
1 pound boneless skinless chicken breast, cut into 1-inch pieces
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 cup mild enchilada sauce or salsa verde
For the Topping:
1 cup cornmeal (white or yellow)
1 cup all-purpose flour, plus more for rolling out dough and dusting pan
2 teaspoons baking powder (check the expiration date on the can)
3/4 teaspoon kosher salt, plus more for seasoning chicken and vegetables as needed; you may want more or less depending on how salty your broth is.
I use about 1 teaspoon of kosher salt for each component of this dish when I’m seasoning. When in doubt, less is more.
You can always add more if you need it! Start with a little less than you think you’ll need and add more as needed to taste.

12 ounces boneless chicken thighs

2 teaspoons curry powder

Mix the curry powder, ginger, garlic, and a dash of salt into a small bowl.

3 tablespoons olive oil
1/2 cup onion, chopped
1/2 cup red bell pepper, chopped
1/2 cup zucchini, chopped
1/2 teaspoon Garlic Powder
1/4 teaspoon salt
1/8 teaspoon Chili Powder, or to taste
6 ounces Cooked Chicken Breast, chopped (or 2 cups cooked black beans)
10 ounces Enchilada Sauce, divided
8 inches Soft Corn Tortillas (or 8″ corn tortillas)
1 cup Cheese Blend (shredded Colby-Jack cheese), divided
Heat oil in a large skillet over medium heat. Cook and stir onion in the hot oil until translucent, about 5 minutes. Add bell pepper and zucchini; cook and stir until tender, about 10 minutes.

2. In a large bowl combine the ground beef, oregano, salt, and pepper. Mix until combined, being careful not to overwork the meat. Form the mixture into 12 even patties. Set aside.
3. In a small bowl, combine the marinara sauce and pizza sauce together and stir to combine. Set aside.
4. Line a baking sheet with parchment paper or aluminum foil and place 6 of the patties on top, making sure to leave room between each patty for even cooking. Spoon about 1 tablespoon of the marinara mixture on top of each patty, spreading it evenly to cover the tops of each patty completely (you may have some leftover marinara).
Top each patty with 2 tablespoons of mozzarella cheese, then place another hamburger patty on top of that patty and press down lightly to seal them together (you will be making 6 burger doubles).
Spread a little more marinara mixture on top of each stacked burger double, then sprinkle with another tablespoon or two of mozzarella cheese.
5. Transfer the prepared pizza burgers to the oven and bake for 8 minutes, then remove from oven and switch oven setting
