Add chicken, pesto, and pasta to the pot. Stir well to combine. Add 1 cup of hot water (I just use water from my kettle). Reduce heat to low, cover with a lid and let simmer for 15-20 minutes, or until pasta is tender.

4. Easy Potato Gnocchi Carbonara

How to make gnocchi carbonara:

1. Heat the oven to 350°F and arrange a rack in the middle.

2. Bring a large pot of salted water to a boil. Boil the potatoes until soft, about 25 minutes. Drain, then peel, and mash the potatoes through a ricer or food mill into a large bowl.

3. Whisk together the egg yolk, egg, cheese, salt, and pepper in another large bowl until smooth; set aside.

4. Let the potatoes cool slightly, then stir in 1/2 cup of flour with a rubber spatula, just enough to bring ingredients together (the dough will still feel sticky). Fold in remaining flour, 1/4 cup at a time (up to 3/4 cup total), until the dough comes together but is still sticky and wet.

Turn out onto a floured work surface and knead gently with lightly floured hands 6 to 8 times until smooth, folding dough over on itself as you knead so it picks up additional flour from your work surface; add only as much flour as needed so that dough doesn’t stick to your hands (this will take about 1/4 cup of flour). Cook pasta shells according to package instructions, drain, and set aside.

In a skillet over medium heat, cook sausage until browned. Transfer sausage to a plate lined with paper towels. Drain fat from skillet. In the same skillet, add olive oil, garlic, and red pepper flakes.

Cook for 30 seconds, stirring continuously. Add in an entire jar of marinara sauce, half of the cooked sausage (reserve another half for later), heavy cream or coconut milk, oregano, basil, chopped spinach if using and salt to taste.

Stir everything together and bring to a boil. Reduce heat to low and simmer for 5 minutes until the sauce has slightly thickened.

While the sauce is simmering, add cheese to the remaining sausage in a bowl and mix to combine (this will be used as filling for the shells). Preheat oven to 375F. Spray a 9×13 baking dish with cooking spray and evenly spread about 1/4 cup of sauce over the bottom of the dish.

Fill each shell with about 1 – 2 tablespoons of sausage mixture (or more if you prefer), place them seam side down on top of the sauce in the baking dish and pour the remaining sauce over them.

1 pound pasta

3 tablespoons butter

3 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

1/4 cup freshly grated Parmesan cheese

2 tablespoons chopped fresh parsley leaves

1 tablespoon fresh lemon juice

Place a large pot of salted water over high heat. Once boiling, add the spaghetti and cook until al dente according to package directions. Drain, reserving about 1 cup of the pasta cooking water.

Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the garlic and cook until fragrant, about 30 seconds. Working quickly, add the cooked spaghetti, lemon zest and juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper; toss to combine.

If the pasta seems dry, add a splash of the reserved pasta water to loosen it up.

Turn off the heat and add the remaining 2 tablespoons butter and the parsley leaves; toss to combine.
