2. Easy Grilled Cheese Sandwich with Avocado
You can make this grilled cheese sandwich in less than 10 minutes. Start by buttering one side of each slice of bread and lay them buttered-side down on the skillet. Layer two slices of cheese on the bread and top with sliced avocado. Lay another slice of cheese on the avocado, then the second slice of bread, buttered-side up.
Cook for about three minutes per side or until golden brown and the cheese is melted.
Let’s be honest: There are few things in this world as satisfying as grilled cheese. Hot, gooey, and cheesy, these sandwiches may seem like an indulgent snack. But that doesn’t mean you can’t have them for dinner every night of the week!
Let’s begin by saying that we’re all about making the most out of your ingredients. The avocado in this recipe is what makes it more than just another grilled cheese sandwich.
It adds flavor, creaminess, and heart-healthy fats to the mix, so you can feel good about eating this any time of the day. Plus, it just hits different because it’s a sweet-and-savory combination.
And if you’re not a fan of avocado you can still make this recipe with just cheese — but why would you want to do that?
3. One-Pot Chicken Pesto Pasta
This one-pot chicken pasta is just the thing when you need a filling, satisfying meal. It’s made with ingredients that are likely already in your pantry and fridge, which means it can be whipped up on a busy weeknight.
In a large pot, melt butter over medium heat. Add onions and garlic and cook until soft, about 3 minutes. Whisk in flour, salt, and pepper until combined. Slowly whisk in milk until smooth.
Let simmer over medium-low heat for 5 minutes or so, stirring occasionally.
Add chicken, pesto, and pasta to the pot. Stir well to combine. Add 1 cup of hot water (I just use water from my kettle). Reduce heat to low, cover with a lid and let simmer for 15-20 minutes, or until pasta is tender.
Stir in parmesan cheese and spinach. Serve immediately! easy meal recipes
4. Easy Potato Gnocchi Carbonara
How to make gnocchi carbonara:
1. Heat the oven to 350°F and arrange a rack in the middle.
2. Bring a large pot of salted water to a boil. Boil the potatoes until soft, about 25 minutes. Drain, then peel, and mash the potatoes through a ricer or food mill into a large bowl.
3. Whisk together the egg yolk, egg, cheese, salt, and pepper in another large bowl until smooth; set aside.
4. Let the potatoes cool slightly, then stir in 1/2 cup of flour with a rubber spatula, just enough to bring ingredients together (the dough will still feel sticky). Fold in remaining flour, 1/4 cup at a time (up to 3/4 cup total), until the dough comes together but is still sticky and wet.
Turn out onto a floured work surface and knead gently with lightly floured hands 6 to 8 times until smooth, folding dough over on itself as you knead so it picks up additional flour from your work surface; add only as much flour as needed so that dough doesn’t stick to your hands (this will take about 1/4 cup of flour). Cut the dough in half and roll each portion easy meal recipes
5. Cheesy Italian Shells with Spicy Italian Sausage
Cook pasta shells according to package instructions, drain, and set aside.
In a skillet over medium heat, cook sausage until browned. Transfer sausage to a plate lined with paper towels. Drain fat from skillet. In the same skillet, add olive oil, garlic, and red pepper flakes.
Cook for 30 seconds, stirring continuously. Add in an entire jar of marinara sauce, half of the cooked sausage (reserve another half for later), heavy cream or coconut milk, oregano, basil, chopped spinach if using and salt to taste.
Stir everything together and bring to a boil. Reduce heat to low and simmer for 5 minutes until the sauce has slightly thickened.
While the sauce is simmering, add cheese to the remaining sausage in a bowl and mix to combine (this will be used as filling for the shells). Preheat oven to 375F. Spray a 9×13 baking dish with cooking spray and evenly spread about 1/4 cup of sauce over the bottom of the dish.
Fill each shell with about 1 – 2 tablespoons of sausage mixture (or more if you prefer), place them seam side down on top of the sauce in the baking dish and pour the remaining sauce over them.
Top with grated mozzarella or Italian blend cheese if easy meal recipes

8. Parmesan Garlic Spaghetti with Lemon and Parsley
Parmesan Garlic Spaghetti with Lemon and Parsley is a quick and easy garlic spaghetti recipe that’s ready in less than 20 minutes!
1 pound pasta
3 tablespoons butter
3 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (optional)
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves
1 tablespoon fresh lemon juice
Place a large pot of salted water over high heat. Once boiling, add the spaghetti and cook until al dente according to package directions. Drain, reserving about 1 cup of the pasta cooking water.
Meanwhile, in a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the garlic and cook until fragrant, about 30 seconds. Working quickly, add the cooked spaghetti, lemon zest and juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper; toss to combine.
If the pasta seems dry, add a splash of the reserved pasta water to loosen it up.
Turn off the heat and add the remaining 2 tablespoons butter and the parsley leaves; toss to combine.

9. One Pan Tortellini Pasta Bake with Sausage and Cheese
This easy, cheesy pasta bake is the perfect weeknight meal. It comes together in less than 30 minutes and is loaded with cheese and sausage.
The best part? This one-pan tortellini bake is a cinch to serve, too. Just grab a couple of forks and dig right in.
You can use any type of tortellini or other stuffed pasta for this recipe, but I always opt for the refrigerated tortellini that’s sold near the deli counter over the freezer section.
I love how quickly it cooks up and how tender it is. You can also try ravioli, manicotti shells or even lasagna noodles that you have broken into smaller pieces.
I love easy meals like this one because they are so versatile. Feel free to swap out the sausage for ground beef or ground turkey if that’s what you have on hand — just be sure to brown it first!
You can also add in a bunch of veggies or some diced tomatoes or other tomato products if you want something with a bit more flavor. Just be sure to tweak the liquid amounts accordingly!
