This recipe is inspired by the classic chicken soup recipe on the back of the chicken bouillon box, but I’ve added my own touches. This is a clear, simple soup with plenty of fresh vegetables and herbs. It’s light enough to be served as a first course or lunch entree, but hearty enough to be served as an evening main course.

There are plenty of things to love about chicken soup. It’s warm, comforting, and perfect for a sick day. But it turns out that chicken soup might also have some serious healing power. Studies have shown that chicken soup can help reduce inflammation, clear congestion, and boost the immune system.
So the next time you’re feeling under the weather, skip the medication and go for a bowl of chicken soup instead.

3. Easy Thai Coconut Chicken Soup
Thai Coconut Chicken Soup is easy and delicious comfort food. You can make this as-is for a paleo/Whole30 friendly soup or add rice noodles to make it a bit heartier.
Easy Thai Coconut Chicken Soup
I’ve made a few Thai-inspired soups, but this one is my favorite so far. It’s full of flavor and creamy thanks to the coconut milk but doesn’t make you feel heavy like most cream-based soups do.
I love having this soup on cold days when I want something comforting, but not too heavy.
It’s also a great option if you want something a little different from your normal chicken noodle soup.
If it’s not too cold where you are, this Easy Thai Coconut Chicken Soup would also make a great meal prep option for lunches throughout the week.
This recipe makes 4 servings, so divide into 4 meal prep containers for lunch or have 2 servings for dinner with leftovers for lunch the next day.
Make sure you store the leftovers in an airtight container in the fridge for up to 3 days. Chicken Soup Recipes

7. Creamy Mediterranean Chicken Soup
Creamy Mediterranean Chicken Soup is total comfort food in a bowl. Aromatic vegetables and chicken are simmered in a rich and creamy broth spiced with saffron.
Saffron is one of the most expensive spices in the world, but it’s worth it if you can get your hands on it. The flavor is so unique and outstanding that you only need a little bit to add to a dish. It doesn’t matter which recipe I use, the moment I add saffron to it, I’m immediately transported back to Spain – where my love affair with this spice began.
This Mediterranean Chicken Soup is one of the go-to soups that I make whenever I have leftover rotisserie chicken or Thanksgiving turkey. It is so easy to make and comes together in less than 30 minutes!
This soup is very adaptable. You can use any vegetable you want or just stick with the ones I used. You can also substitute rice for pasta or quinoa if you don’t have orzo on hand. If you’re looking for more richness, stir in some cream at the end or serve with a dollop of crème fraîche or sour cream. Chicken Soup Recipes
