1 tablespoon (15 g) butter or olive oil brushed with olive oil
A few thin slices of yellow onion
Few thin slices of tomato
2-3 lettuce leaves
2-3 slices of cucumber,
2-3 slices of avocado,
4-5 thin slices of pickled jalapeno (optional)
1/4 cup (40 g) zucchini slices (about 1/2 medium zucchini)
1/4 cup (40 g) sliced yellow zucchini (about half of a medium)
1/4 cup (40 g) sliced red pepper (about 1/2 pepper)
1/4 cup (40 g) alfalfa sprouts or other sprouts of choice (optional)
1 tablespoon crushed hemp or cashew seeds, for garnish
Vegetarians, look away. This is a meat lover’s dream.

But you don’t have to be a vegetarian to appreciate it because no matter what your dietary lifestyle, this sandwich is going to taste incredible.

First of all, it starts with fresh ciabatta bread. As far as I’m concerned, this kind of bread is the only way to go for sandwiches because of its chewiness and crisp crust.

But the real showstopper in this sandwich is the crispy fried eggplant slices.
